Assam Pepper’s Culinary Voyage: This exotic spice enters French cuisine scene

In a groundbreaking move, Assam Pepper (Piper mullesua), a rare spice native to Arunachal Pradesh in the Northeast region of Bharat, has made its maiden culinary voyage to France. This exotic pepper, harvested from the tropical forests of the region, is set to elevate French cuisine with its distinctive flavour profile.

The export of Assam Pepper to France was facilitated by organic food company JeevAnksh managing director Gunajit Brahma. Harvested from wild vines resembling blackberries, Assam Pepper boasts an earthy and woody aroma, with a nuanced taste characterised by subtle tanginess and mild numbing sensations.

Described by London-based SpiceMountain as possessing a complex flavour reminiscent of smoky pu’erh tea with hints of citrus peel and menthol, Assam Pepper promises a culinary adventure. Its compatibility with fish, root vegetables, and its potential as a substitute for cloves in roasting ham or gammon has captured the attention of chefs and food enthusiasts alike.

Gunajit Brahma disclosed the challenges encountered in sourcing Assam Pepper from the wilds of Arunachal Pradesh, highlighting the intricate process involved in bringing this unique spice to international markets. Despite hurdles such as paperwork requirements in New Delhi, the export of 200 kgs of Assam Pepper to France signifies a triumph for JeevAnksh (meaning Ingredients of Life in Hindi) and the Northeast’s vibrant culinary heritage.

This move, other than introducing French palates to the rich flavours of Northeast Bharat, also accentuates the region’s potential as a source of premium spices with global appeal.
